Yuzu Agrumato is a complex oil made by simultaneously pressing fresh yuzu and olives together. Our collaboration with Mount Zero Olives has resulted in an oil that is unique, fragrant and full of flavour. Available in 250 ml bottles and 2 litre casks and now in a twin pack with our new Bergamot Agrumato.
Yuzu Agrumato
In 2021 we started a collaboration with Mount Zero Olives to produce this wonderfully zesty oil. We're so proud of this product and working with the team at Mount Zero has been a delight.
The term Agrumato is Italian in origin, and originally referred to a process developed in Abruzzo of simultaneously pressing citrus fruit with olives to produce flavoured olive oils.
The process is tedious and more expensive than just producing Extra Virgin Olive Oil. To make our Yuzu Agrumato, olives along with our locally grown ripe fresh yuzu were crushed and pressed simultaneously to produce this very special oil. Being an artisan product there are variations from year to year just like wine. This years oil has a more subtle yuzu profile most likely due to the timing of the press. Olives become milder in flavour as the harvest progresses and whilst we try to source olives towards the end of their season so as to not overpower the fruit, with the yuzu harvest being early this year the agrumato had to be made with mid season olives. The result is an beautiful oil full of flavour with the yuzu being slightly less forward than previous years.
Whilst it is made with Extra Virgin Olive Oil unfortunately the cold pressed agrumato cannot be called "Extra Virgin".
